Your app, your rules.
Women players choose whether they play with the whole community or only with women. The app asks right after you sign up, and you can change your answer whenever you want in Settings › Privacy.
It works in both directions
Men stop appearing among the players the app suggests to you.
You stop appearing among the ones it suggests to them. They can't find you, and they can't send you match proposals.
If it only filtered your side, the proposals would keep arriving and you'd have to turn them down one by one. That's exactly what the setting spares you.

Choosing women-only doesn't erase anything.
Your contacts stay, the men included. The preference narrows who you meet, not who you already have.
Your thresholds follow your gender, not your preference
